I started decorating cakes when I was planning my own wedding, 37 years ago. I lived in Canada the first couple dozen years of my life, and I did not want a typical Canadian fruit cake which is what every one there always had at that time. So ordered a Wilton catalog and the rest is history. My wedding cake turned out ok but I have made prettier cakes since then!!
I use rolled fondant for all my wedding cakes as it is so much easier to use and keep nice, after all a wedding is only once, if people do not like the icing they can leave it and not eat it. One thing that people know when they order from me they know they will get enough cake to serve everyone there and some people can have seconds if they desire. Also I encourage the couple to choose as many different flavors as they desire as then people have a choice in what they want to eat. Makes the cake very personal. I usually make gum paste flowers however the last couple of cakes I didn't have the time to make them as the brides didn't choose their flowers until two weeks before the wedding.
